Coffee & Walnut Loaf Cake Recipe

For the coffee lover who wants to put it in their cake and eat it!
This incredibly moist and nutty Coffee and Walnut Loaf Cake will satisfy those coffee cravings whilst helping you through an afternoon slump. The intense flavors of this cake will make it hard to resist. Use florence by mills coffee concentrate to make it easy!

- 2 tbsp (2 tablespoons) of florence by mills coffee concentrate
- 2 tbsp of coffee concentrate (for the buttercream)
- 2oz of chopped walnuts
- 3 eggs
- 3oz of softened butter (for the buttercream)
- 6 oz of self raising flour
- 6oz butter
- 6oz of dark brown sugar
- 6oz powdered sugar (for the buttercream)
- walnuts (to decorate)
this recipe uses

- loaf pan
- mixing bowl
- spoon or spatula
Before you begin, preheat your oven to 350F.
In a bowl, cream the butter and sugar until fluffy.
Then add your florence by mills coffee concentrate and mix together thoroughly.
Add the eggs one at a time and beat well into the mixture, between each one.
Sieve and fold in the flour and then the walnuts.
Spoon the mixture into a lined 2lb loaf tin and bake for approximately 45 minutes, or until a skewer comes out clean.
Remove from the oven and allow to cool briefly before lifting out and placing onto a wire rack to cool completely.
For the buttercream topping, in a bowl cream the butter and sugar until light, then add your florence by mills coffee concentrate. Spread over the top of the cake and scatter with chopped walnuts.
